Introducing a new product to Ommi's Night Market series, Brown Vermicelli with Braised Intestine (vermicelli thick soup with braised pork intestine). In contrast to what its major ingredient might have indicated, this is actually a comforting and hearty dish with a mellowed taste.

Ingredient cheat sheet - what is brown vermicelli and why it?
Brown vermicelli got its name from the look. Rice vermicelli were sun-bathed and roasted, and got a shiny brown appearance from the process. Brown vermicelli developed a stronger gluten structure during the procedure and therefore has a more chewy texture compared to the normal vermicelli.
We chose brown vermicelli over the normal vermicelli for its slightly nutty and roasted flavour, and it worked better with the rich flavour of the braised pork intestine.
