這一週,小編收到超多雪梨辦桌相關訊息,很多人想去辦桌現場,卻沒機會吃到,大家不用再饞了....Ommis今年農曆春節直接還原當天的美味‼️

我們熬了好幾個夜,臨時推出六道「雪梨辦桌料理」,就為了讓大家能在春節時期,重溫台灣辦桌的味道🥢

Ommi’s 精選六道「同場加映」台灣辦桌料理,完整重現雪梨辦桌現場的經典菜色與風味:


1.  Braised Scallop and Prawn Thick Soup|干貝蝦仁紅燒羹

A classic starter in traditional Taiwanese banquets (Ban-doh). The soup base is aromatic with sautéed dried flounder and dried shrimp, combined with the sweetness of Napa cabbage and rich chicken stock. Featuring premium scallops and prawns, and finished with a touch of black vinegar, this thick soup delivers a perfectly balanced savory-sour profile with rich seafood umami.

這道紅燒羹是台灣辦桌文化中最經典的開場大菜之一。
以扁魚與蝦米爆香作為湯底靈魂,融合大白菜的自然清甜與雞高湯的濃郁鮮美,加入嚴選干貝與彈牙蝦仁,最後以烏醋提味,讓整體風味酸甜平衡、海味層次分明。

 

2. Oolong Tea Smoked Murray Cod 烏龍茶燻鱈魚

Fresh Murray Cod delicately smoked using premium Taiwanese Oolong tea leaves. The tea aroma infuses the fish, creating a subtle smoky fragrance with a gentle tea aftertaste. Served with lemon and cocktail sauce, this is an elegant cold appetizer.

選用鮮嫩的 Murray Cod,以台灣特有的烏龍茶葉低溫煙燻。
茶香細緻滲入魚肉紋理,使表皮呈現自然金黃色澤,入口帶有淡雅煙燻香氣與烏龍茶回甘。搭配檸檬與千島醬食用,清爽不膩,是一道非常適合作為冷前菜的優雅選擇。

 

3. Honey Shacha Whole Chicken 沙茶蜜香

A fusion of Taiwan’s favorite Shacha sauce and sweet maltose. The whole chicken is marinated in savory Shacha sauce and glazed with maltose during roasting, resulting in a crispy, glossy skin. Served with glass noodles that soak up the rich chicken drippings, delivering a deeply satisfying sweet-savory flavor.

這道菜完美結合台灣人最熟悉的沙茶香氣與麥芽糖的甜潤。
全雞先以沙茶醬醃製入味,烤製過程中反覆刷上麥芽糖水,形成油亮酥脆的外皮。底層搭配吸滿雞汁與沙茶香氣的冬粉,鹹甜交織、層次豐富,是辦桌中最容易被秒殺的一道主菜。

 

4. Pork Belly Gua Bao (Tiger Bites Pig) 財源滾滾虎咬豬(刈包)

A famous Taiwanese street food and a lucky Lunar New Year dish. Known as “Tiger Bites Pig,” it symbolizes wealth and prosperity. Tender braised pork belly, tangy pickled mustard greens, and sweet peanut powder are tucked into a fluffy handmade bun for a perfectly balanced bite.

刈包是台灣最具代表性的街頭小吃之一,也是農曆新年必備的吉祥菜。
「虎咬豬」的造型象徵老虎張口咬住豬肉,如同錢包滿滿,寓意財源滾滾。軟嫩滷三層肉搭配酸菜、花生粉與香菜,夾入熱騰騰的刈包中,是一口就讓人安心的經典滋味。

 

5. Mutton Hot Pot Stew藥膳羊肉爐

Premium mutton is slow-cooked with traditional medicinal herbs, creating a mild, warming broth and tender, flavorful meat—perfect for a family reunion dinner.

嚴選無羶味羊肉,搭配多種中藥材慢火燉煮。
湯頭溫潤甘甜,羊肉軟嫩不乾柴,暖胃又暖心,是圍爐桌上最能撐場面的溫補湯品。

 

 

6. Prawn Cocktail in Taiwanese Style (Beer Batter Fried Prawn)

毛毛蟲海大蝦

A creative Taiwanese banquet dish featuring premium Australian King Prawns coated in spinach-infused beer batter. Crispy on the outside with a hint of hops aroma, and juicy, bouncy prawn meat inside—simply seasoned to let the ingredients shine.

選用澳洲國王大蝦,搭配菠菜與特製啤酒麵糊油炸。
外皮金黃酥脆,帶有淡淡啤酒香氣,內裡蝦肉鮮甜彈牙,簡單以椒鹽提味,是台式辦桌中少見卻令人印象深刻的創意手路菜。
